Orange M Essence 2194 (Orange Mandarin)
APPLICATION

These flavours are designed for beverage and are completely water soluble. They are made by cold solvent (a mixture of alcohol + PG + deionised water) – extraction and separation of a blend of orange, mandarin and grapefruit oils, during which process most of the insoluble terpenes approximately 95% present in the cold pressed oils are removed.

These are true essences because they are extracted from the natural name expressed essential oils of the named citrus fruits. These essences are therefore characterised by soft gentle aromas as compared with oil in alcohol flavour with natural-identical boosters which are most penetrating and harsh. These flavours do no smell as refreshing because most of the terpenes which are carriers for the oxygenated compounds i.e. the real flavour ingredient which are water soluble are extracted and transferred to the solvent mixture now called “soluble essence” i.e. minus the terpenes.

Removal of the terpenes affects water solubility and the flavour is less likely to oxidised and give off flavour in the ready beverage. These flavours taste very natural and well rounded with bitterness as compared to oil in alcohol citrus flavours. The recommended dose in the final beverage varies from 0.1% to 0.2%. It gives a very clear beverage which is suitable for carbonation.

In clear syrup for dilution, the dose in syrup is = dilution factor x dose of ready-to drink e.g. 5 x 0.1% = 0.5% in syrup or 5 x 0.15% = 0.75% in syrup.

In ice-lollie – 0.15% - 0.2% in ice-lollie freezing syrup + 0.1% – 0.2% citric acid sugar content should be 15% – 20% w/v.

It is also a booster for fresh juices – the recommended dose is 0.15%.

In milk & ice cream – 0.2% to 0.3% in ice cream mix. A little acid could be incorporated with lactic acid.

Keep sealed in a cool place, away from direct sunlight. It is stable for two years.
